Concept

Buddha bowls—grain-based bowls with vegetables, protein, and sauce arranged in sections—became the meal prep darling of the mid-2010s. The name allegedly refers to the rounded belly shape of a full bowl, though origins remain debated. The format allowed endless customization: quinoa or rice, roasted or raw veggies, tofu or chicken, tahini or peanut sauce.

Instagram Appeal

The visual layout was perfect for overhead food photography. Colorful vegetables, distinct sections, Instagram-friendly composition. Health bloggers and meal prep accounts drove the trend through 2015-2018, positioning Buddha bowls as the antidote to processed foods and restrictive diets.

Evolution

The format spawned variations: poke bowls, smoothie bowls, açai bowls, macro bowls. Chains like Sweetgreen and Cava built entire business models around customizable bowl concepts. By 2020, “bowl food” was ubiquitous in fast-casual dining, from airports to food courts.
