Also known as: flatwhite

Flat white is an espresso drink with microfoam milk that became a global phenomenon in the 2010s. Origin disputed between Australia and New Zealand (1980s), but international popularity exploded when Starbucks added it to US menus (January 2015). Distinguished from latte by smaller size (5-6oz vs 8-12oz), higher espresso ratio, velvety microfoam texture.

Cultural Migration

Australian/NZ Origins: Melbourne and Wellington coffee cultures both claim invention (1980s). Terminology standardized in Australia/NZ by 2000s as distinct from latte (less milk, no foam layer) and cappuccino (more foam, chocolate optional).

UK Invasion: 2010-2013, Australian/NZ baristas brought flat white to London cafes. Became symbol of specialty coffee, differentiator from Starbucks-style lattes.

US Arrival: Starbucks added flat white to menu January 6, 2015, immediately popularized nationwide. Third wave cafes had offered it for years, but Starbucks legitimized it for mainstream consumers.

Preparation

Recipe: Double ristretto shot (18-20g coffee, 30-35ml extraction), 5-6oz steamed milk (microfoam, no distinct foam layer), poured at 60-65°C. Higher coffee-to-milk ratio than latte.

Microfoam: Key distinction. Milk should be velvety, glossy, integrated (not separated foam layer). Achieved through proper steam wand technique, creating tiny bubbles throughout.

Presentation: Typically served in ceramic cup (not glass), latte art (rosetta/heart), no chocolate powder (unlike cappuccino in some regions).

Controversies

Origin Wars: Australia vs New Zealand baristas argue over invention. Both countries have passionate coffee cultures, pride in flat white as export.

Definition Debates: What constitutes a flat white? Size, milk texture, espresso ratio all disputed. Some argue Starbucks version isn’t authentic (too large, wrong texture).

Pretentiousness: Criticized as unnecessarily complicated. “It’s just a small latte” backlash. Seen as coffee snobbery in some circles.

Timeline

  • 1980s: Origins in Australia/New Zealand cafes
  • 2010-2013: UK adoption, Melbourne-style cafes proliferate
  • 2015: Starbucks US launch (Jan 6), mainstream awareness
  • 2016-2018: Added to coffee shop menus globally, became standard offering
  • 2019-2023: Fully normalized, no longer seen as exotic

Economic Impact

Specialty Coffee Gateway: Flat white introduced consumers to higher espresso ratios, specialty preparation. Often first step from Starbucks to third wave cafes.

Pricing: Typically same as latte ($4-6) despite less milk, justified by skill/precision required. Higher margin for cafes.
