Shakshuka - Middle Eastern Brunch Revolution

Shakshuka—eggs poached in spiced tomato sauce—transformed from regional Israeli/North African dish to international brunch menu staple 2013-2018, becoming one of the decade’s most Instagrammed breakfasts.

Origins & History

Disputed origins: Tunisia, Yemen, Ottoman Empire all claim ancestry. Modern Israeli version became standard: eggs poached in tomato-pepper sauce with cumin, paprika, and sometimes harissa or feta.

American Breakout

Yotam Ottolenghi’s Jerusalem cookbook (2012) introduced it to Western audiences. Brooklyn cafés (Jack’s Wife Freda, Balaboosta) put it on brunch menus 2013-2014. By 2016, Bon Appétit declared it “the brunch dish of the year.”

Instagram Appeal

Photogenic one-pan dish: bright red sauce, runny egg yolks, fresh herbs, served bubbling in cast iron skillet. Overhead shots dominated foodie feeds. #Shakshuka hit 500K+ Instagram posts by 2018.

Home Cooking Adoption

Simple technique (simmer sauce, crack eggs, cover until set) made it accessible. Meal kit services (Blue Apron, HelloFresh) featured it. Became vegetarian brunch go-to.

Cultural Crossover

From Jewish delis to upscale brunch spots to mainstream cafés. Trader Joe’s sold pre-made sauce (2018). Variations: green shakshuka (with greens), breakfast pizza shakshuka, shakshuka bowls.
